About the Cheese Maker
Nicolas Rovecchio is the virtuoso behind Montmartre’s beloved cheese shop. After receiving his diploma, Nicolas trained for 12 years with Alain Boulay, the renowned cheese maker on Rue Mouffetard. He opened his first cheese shop in 2007 on Rue Lepic.

- No Silage: “I do not work with producers who use silage. It promotes the development of bacteria and toxic substances in food. The preservation technique also affects the milk’s taste,” he explains.
